Shuwa Cooking Experience, Oman

Shuwa, a traditional Omani dish, derived from the Arabic verb 'shawaa,' which means 'to grill', can be found all across the country in its respective interpretations. The dish typically features beef, lamb, or goat, coated in a thick blend of spices and olive oil and wrapped in palm fronds or banana leaves, before being cooked slowly underground in a 'sand oven' for two to three days.

In Oman, this dish is often prepared during special celebrations, such as Eid al-Fitr, as the process is time consuming and demands constant attention. Many towns and communities have a communal pit which is used for the occasion, which is often why this dish is considered a 'cornerstone' of Omani culture and history.
